Classic Oxtail Stew Recipe
Ingredients:
- 2 kg oxtail
- 2 tsp vegetable oil
- 4 cups beef stock
- 1 cup red wine
- 1 large onion, chopped
- 5 garlic cloves, finely chopped
- 1 can (410g) chopped tomatoes
- 2 stalks celery, finely chopped
- 2 sprigs rosemary
- 2 bay leaves
- 2 carrots, peeled and finely chopped
- 2 potatoes, diced
- Salt and pepper to taste
Instructions:
- Heat oil in a pot and brown the oxtail. Remove from the pot.
- Add chopped onion, garlic, and carrots to the pot. Cook for 3 minutes.
- Add herbs (rosemary and bay leaves) and sauté for another minute.
- Pour in the red wine and cook to reduce slightly.
- Return the oxtail to the pot and add the chopped tomatoes.
- Season with salt and pepper.
- Pour beef stock over the oxtail.
- Bring to a boil, then simmer slowly for 3 hours. Check regularly and add water if needed.
- Add diced potatoes after two hours of cooking.
- Remove the lid for the last 45 minutes to allow the sauce to reduce and thicken.
