Oxtail (C-Class) is a flavorful cut of meat that’s perfect for creating hearty and comforting dishes. Here’s how you can prepare a classic Oxtail Stew:

Classic Oxtail Stew Recipe

Ingredients:

  • 2 kg oxtail
  • 2 tsp vegetable oil
  • 4 cups beef stock
  • 1 cup red wine
  • 1 large onion, chopped
  • 5 garlic cloves, finely chopped
  • 1 can (410g) chopped tomatoes
  • 2 stalks celery, finely chopped
  • 2 sprigs rosemary
  • 2 bay leaves
  • 2 carrots, peeled and finely chopped
  • 2 potatoes, diced
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a pot and brown the oxtail. Remove from the pot.
  2. Add chopped onion, garlic, and carrots to the pot. Cook for 3 minutes.
  3. Add herbs (rosemary and bay leaves) and sauté for another minute.
  4. Pour in the red wine and cook to reduce slightly.
  5. Return the oxtail to the pot and add the chopped tomatoes.
  6. Season with salt and pepper.
  7. Pour beef stock over the oxtail.
  8. Bring to a boil, then simmer slowly for 3 hours. Check regularly and add water if needed.
  9. Add diced potatoes after two hours of cooking.
  10. Remove the lid for the last 45 minutes to allow the sauce to reduce and thicken.
