Fragrant Lamb Curry Recipe
Ingredients:
- 1 kg lamb curry cuts (bone-in or boneless, such as shoulder or shank)
- 2 large onions, finely chopped
- 4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 2 green chilies, sliced (adjust to your preferred spice level)
- 1 teaspoon turmeric powder
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon chili powder (adjust to taste)
- 1 cinnamon stick
- 4-5 cloves
- 2-3 green cardamom pods
- 2 bay leaves
- Salt, to taste
- 2 tablespoons vegetable oil
- Fresh coriander leaves, for garnish
Instructions:
- Heat oil in a large pot or pressure cooker.
- Add the chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and green chilies. Cook for a couple of minutes.
- Stir in the turmeric powder, ground coriander, ground cumin, and chili powder.
- Add the lamb curry cuts and brown them on all sides.
- Add the chopped tomatoes and cook until they break down.
- Pour in enough water to cover the meat.
- Add the cinnamon stick, cloves, green cardamom pods, bay leaves, and salt.
- Cover and simmer on low heat for 1.5 to 2 hours (or pressure cook for about 30 minutes).
- Check the seasoning and adjust if needed.
- Garnish with fresh coriander leaves.
