Fragrant Lamb Curry Recipe

Ingredients:

  • 1 kg lamb curry cuts (bone-in or boneless, such as shoulder or shank)
  • 2 large onions, finely chopped
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, sliced (adjust to your preferred spice level)
  • 1 teaspoon turmeric powder
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder (adjust to taste)
  • 1 cinnamon stick
  • 4-5 cloves
  • 2-3 green cardamom pods
  • 2 bay leaves
  • Salt, to taste
  • 2 tablespoons vegetable oil
  • Fresh coriander leaves, for garnish

Instructions:

  1. Heat oil in a large pot or pressure cooker.
  2. Add the chopped onions and sauté until golden brown.
  3. Add minced garlic, grated ginger, and green chilies. Cook for a couple of minutes.
  4. Stir in the turmeric powder, ground coriander, ground cumin, and chili powder.
  5. Add the lamb curry cuts and brown them on all sides.
  6. Add the chopped tomatoes and cook until they break down.
  7. Pour in enough water to cover the meat.
  8. Add the cinnamon stick, cloves, green cardamom pods, bay leaves, and salt.
  9. Cover and simmer on low heat for 1.5 to 2 hours (or pressure cook for about 30 minutes).
  10. Check the seasoning and adjust if needed.
  11. Garnish with fresh coriander leaves.
