Chicken Necks

Chicken necks, often overlooked but packed with flavour, can be transformed into a delightful dish. Here are a few ways to enjoy them:

  1. Karabo Phiri’s Flavorful Chicken Necks:
    • Ingredients:
      • 500g chicken necks
      • 1 whole white onion (finely sliced or chopped)
      • Salt and pepper for seasoning
      • 1 tsp chilli flakes
      • 1 tsp chicken spice
      • 2 garlic cloves
      • 2 tbsp olive oil
      • 2 tbsp flour
      • 1/2 cup milk
      • 2 cups of water
    • Method:
      1. In a large pot, add the chicken necks, warm water, and spices. Let them cook for 50-60 minutes.
      2. Once the water has reduced, add olive oil, onions, and garlic. Fry for about 5 minutes (or until brown).
      3. Add flour and milk, letting it cook until the sauce thickens.
      4. Adjust the consistency with more milk or water.
      5. Serve with mashed potatoes or pap1.
