Chicken necks, often overlooked but packed with flavour, can be transformed into a delightful dish. Here are a few ways to enjoy them:
- Karabo Phiri’s Flavorful Chicken Necks:
- Ingredients:
- 500g chicken necks
- 1 whole white onion (finely sliced or chopped)
- Salt and pepper for seasoning
- 1 tsp chilli flakes
- 1 tsp chicken spice
- 2 garlic cloves
- 2 tbsp olive oil
- 2 tbsp flour
- 1/2 cup milk
- 2 cups of water
- Method:
- In a large pot, add the chicken necks, warm water, and spices. Let them cook for 50-60 minutes.
- Once the water has reduced, add olive oil, onions, and garlic. Fry for about 5 minutes (or until brown).
- Add flour and milk, letting it cook until the sauce thickens.
- Adjust the consistency with more milk or water.
- Serve with mashed potatoes or pap1.

- Season the necks with salt and cook them in a 65°C water bath for 2-4 hours.
- Blot them dry, then broil or fry for extra crispiness.

- Simmer the necks with aromatics, salt, and water for several hours.
- Skim off any scum that forms on the surface.
- Enjoy the rich broth or use the tender meat in soups and stews3.
